If you need a quick and absolutely delicious recipe for dinner, look no further. Anytime I have to make someone a meal for someone who has just had a baby or a surgery or whatever the reason, this is one that I always choose first. It is always a hit and the recipe is always asked for!
My mother-in-law originally made this poppy seed chicken casserole and at one point I made it healthier and then adapted it over the years to basically whatever I had on hand. So this concoction is my favorite variation of this recipe!
This is a homey and hearty poppy seed chicken casserole. It is not a health conscious casserole, but it is a delicious comfort food one. It is so easy to make. You literally just throw everything together and mix it in!
So let’s get to making this Quick Dinner!
Preheat oven to 350
First you will put 1 lb of chicken in the instapot or however you choose to cook it. Add salt and pepper. When the chicken is finished, shred it!
Cook 2 cups of white rice. For extra flavor when cooking rice, replace the water with chicken broth!
Spray a 9X13 casserole dish so the food won’t stick.
Put cooked rice in casserole dish followed by drained green beans. Then add shredded chicken, cream of chicken soup, mayo, greek yogurt and mix it all together.
Beat 2 sleeves of Ritz crackers so it is crumby. Melt 2 sticks of butter and add 1-2 tablespoons of poppy seeds and crackers and mix together then spread on top of the casserole.
Bake for 30 minutes until the top is nice a lightly browned.
That’s it! It is that simple. Now you have dinner tonight or tomorrow and it feeds 10-12 people.

- 2 cans of cream of chicken soup
- 1lb of cooked shredded chicken
- 1 can of green beans, drained
- ½ cup mayo
- ½ greek yogurt
- 2 big sleeves of ritz crackers
- 2 sticks of butter
- 1-2 tb of poppy seeds
Instructions

8. Melt 2 sticks of butter
9. add 1-2 tablespoons of poppy seeds and crackers to melted butter and mix
together
10. Spread cracker mixture on top of casserole
11. Bake for 30 minutes until the top is a beautiful golden brown!
